For those not nuts for nuts, omit them.

Ingredients

  • 2 cups flour, sifted
  • 1 egg, beaten
  • 1/2 t. salt
  • 1 cup cranberries, chopped
  • 1/2 t. baking soda
  • 1 T. grated orange peel
  • 1-1/2 t. baking powder
  • 3/4 cup orange juice
  • 1 cup sugar
  • 1/4 cup boiling water
  • 2 T. shortening or oil
  • 1 cup chopped walnuts

Directions

  1. Heat oven to 350°F. Sift (Mix) together flour, salt, baking soda, baking powder & sugar.
  2. Combine in separate bowl orange peel, orange juice, shortening or oil & boiling water and add to dry ingredients.   3. Add egg and beat well.
  4. Fold in cranberries and nuts.
  5. Pour into greased 9 x 5 x 2-3/4" loaf pan.
  6. Bake 1 hour, let cool 10 min before removing from pan.
  7. Cool completely, then wrap and let stand overnight before cutting.
