Ingredients

2 Cups (sifted) flour 1 egg beaten ½ t. salt 1 cup chopped cranberries ½ t. baking soda 1 T. grated orange peel 1½ t. baking powder ¾ cup orange juice 1 cup sugar ¼ cup boiling water 2 T. shortening or oil 1 cup chopped walnuts

Directions

  1. Heat oven to 350. Sift (Mix) together flour, salt, baking soda, baking powder & sugar.
  2. Combine* in separate bowl orange peel, orange juice, shortening or oil & boiling water and add to dry ingredients. (*NOTE: I combined and mixed wet ingredients then added the sifted comb. dry ingredients in stages to mixer. Recipe was later changed to no sifting, AND no boiling water, everything added together and mixed.)
  3. Add egg and beat well.
  4. Fold in cranberries and nuts.
  5. Pour into greased 9x5x2¾ loaf pan.
  6. Bake 1 hour, let cool 10 min before removing from pan.
  7. Cool completely, then wrap and let stand overnite before cutting.
