Cranberry Orange Bread

For those not nuts for nuts, omit them.

Ingredients

  • 2 cups flour, sifted
  • 1 egg, beaten
  • 1/2 t. salt
  • 1 cup cranberries, chopped
  • 1/2 t. baking soda
  • 1 T. grated orange peel
  • 1-1/2 t. baking powder
  • 3/4 cup orange juice
  • 1 cup sugar
  • 1/4 cup boiling water
  • 2 T. shortening or oil
  • 1 cup chopped walnuts

Directions

  1. Heat oven to 350°F. Sift (Mix) together flour, salt, baking soda, baking powder & sugar.
  2. Combine in separate bowl orange peel, orange juice, shortening or oil & boiling water and add to dry ingredients. (I combined and mixed wet ingredients then added the sifted combined dry ingredients in stages to mixer. Recipe was later changed to no sifting, AND no boiling water, everything added together and mixed.)
  3. Add egg and beat well.
  4. Fold in cranberries and nuts.
  5. Pour into greased 9 x 5 x 2-3/4" loaf pan.
  6. Bake 1 hour, let cool 10 min before removing from pan.
  7. Cool completely, then wrap and let stand overnight before cutting.
