Ingredients
Salad
- 15 ounce can chickpeas (garbanzo beans) rinsed and drained well
- 1 English cucumber, diced
- 2 tomatoes, diced
- 1 red bell pepper, diced
- 1 sweet onion, diced
- 3 cups fresh baby spinach, chopped
- 3/4 cup Kalamata olives, pitted and chopped
- 1 ounce jar marinated artichoke hearts, drained
Dressing
- 1/4 cup olive oil
- 2 tbsp red wine vinegar
- 1 clove garlic, minced
- 1 lemon, juiced
- 1 tsp oregano
- salt & pepper to taste
Directions
- Combine chickpeas with the cucumber, tomatoes, pepper, onion, spinach, kalamata olives and artichokes in a large mixing bowl.
- Add the dressing ingredients to a small bowl and whisk to combine (or shake them together in a small mason jar).
- Add the dressing to the salad and toss gently until well combined.
- Cover and refrigerate for at least 15 minutes to allow the flavors to marinate together. Enjoy!
