Ingredients

Salad

  • 15 ounce can chickpeas (garbanzo beans) rinsed and drained well
  • 1 English cucumber, diced
  • 2 tomatoes, diced
  • 1 red bell pepper, diced
  • 1 sweet onion, diced
  • 3 cups fresh baby spinach, chopped
  • 3/4 cup Kalamata olives, pitted and chopped
  • 1 ounce jar marinated artichoke hearts, drained

Dressing

  • 1/4 cup olive oil
  • 2 tbsp red wine vinegar
  • 1 clove garlic, minced
  • 1 lemon, juiced
  • 1 tsp oregano
  • salt & pepper to taste

Directions

  1. Combine chickpeas with the cucumber, tomatoes, pepper, onion, spinach, kalamata olives and artichokes in a large mixing bowl.
  2. Add the dressing ingredients to a small bowl and whisk to combine (or shake them together in a small mason jar).
  3. Add the dressing to the salad and toss gently until well combined.
  4. Cover and refrigerate for at least 15 minutes to allow the flavors to marinate together. Enjoy!
