Stephanie's Tamale Pie
Ingredients
- 1 pound ground beef
- 1/2 small diced onion
- 1-1/2 tsp chili powder
- 3/4 tsp cumin
- 3/4 tsp kosher salt
- 1/2 tsp pepper
- 1 can stewed or fire roasted/diced tomatoes
- 1 small can sliced olives, drained
- 1 small can green chilies
- 1 can corn, drained
- 1 egg, beaten
- 1-1/2 cup milk
- 3/4 cup cornmeal
- 1/2 tsp kosher salt
- 2 cups cheddar cheese, shredded
Directions
- Brown ground beef and onions. Drain any grease.
- In large bowl add: ground beef and onions with all seasonings, tomatoes (with juice), olives, chilies, and corn. Mix.
- In a medium bowl or 4-cup Pyrex, add: egg, milk and cornmeal and salt. Stir.
- Pour into bowl with ground beef mixture. Stir.
