Tamale pie

Stephanie's Tamale Pie

Ingredients

  • 1 pound ground beef
  • 1/2 small diced onion
  • 1-1/2 tsp chili powder
  • 3/4 tsp cumin
  • 3/4 tsp kosher salt
  • 1/2 tsp pepper
  • 1 can stewed or fire roasted/diced tomatoes
  • 1 small can sliced olives, drained
  • 1 small can green chilies
  • 1 can corn, drained
  • 1 egg, beaten
  • 1-1/2 cup milk
  • 3/4 cup cornmeal
  • 1/2 tsp kosher salt
  • 2 cups cheddar cheese, shredded

Directions

  1. Brown ground beef and onions. Drain any grease.
  2. In large bowl add: ground beef and onions with all seasonings, tomatoes (with juice), olives, chilies, and corn. Mix.
  3. In a medium bowl or 4-cup Pyrex, add: egg, milk and cornmeal and salt. Stir.
  4. Pour into bowl with ground beef mixture. Stir.
  5. Spray glass casserole with pan spray. Pour ingredients in to the casserole.
  6. Bake at 350°F for 1 hour uncovered. Remove from oven and spread cheddar on top. Put back in oven for 10 more minutes. Let rest for 10 minutes.
  7. Serve with sour cream and salsa.
