Ingredients
- 4 boneless, skinless chicken breasts or thighs
- 1 tsp olive oil
- 2 tsp cajun seasoning
- 2 tbsp butter
- 1 tbsp honey
- fresh cilantro, chopped (optional)
- 1 tbsp butter (if needed)
- 1 celery stalk, thinly sliced
- 1 bell pepper (red), diced
- 1 tsp garlic, minced
- 1 cup long-grain white rice
- 2-1/4 cups low-sodium chicken broth
- 1 tbsp cajun seasoning
Instructions
- Pat the chicken dry and rub with olive oil. Season both sides with cajun seasoning.
- Heat a large skillet over medium heat. Melt the butter and stir in the honey.
- Sear the chicken for 1 to 2 minutes per side until lightly browned. Remove and set aside.
- In the same skillet, add celery, bell pepper, and garlic. Saute for about 1 minute until fragrant.
- Add rice, cajun seasoning, and chicken broth. Stir and bring to a boil.
- Reduce heat to medium-low. Return the chicken to the skillet.
