  • 1 tbsp honey
  • fresh cilantro, chopped (optional)

  • 1 celery stalk, thinly sliced
  • 1 bell pepper (red), diced
  • 1 tsp garlic, minced
  • 1 cup long-grain white rice
  • 2-1/4 cups low-sodium chicken broth
  • 1 tbsp cajun seasoning

Instructions

  1. Pat the chicken dry and rub with olive oil. Season both sides with cajun seasoning.
  2. Heat a large skillet over medium heat. Melt the butter and stir in the honey.
