This is an attempt to make a simple curry sauce using red curry powder I recently found in the cabinet. This recipe is a work in progress. Do not try this at home!

Ingredients

   2 tablespoons red onion, finely minced
   1 tablespoon fresh ginger, minced
   1 garlic clove, minced
   2 tablespoons curry powder
   14 ounce can coconut milk
   1/2 cup broth (vegetable or chicken)
   1 tablespoon honey
   2 tablespoons soy sauce
   1/4 teaspoon red pepper flakes
   1/4 cup carrots, shredded (optional)
   1/4 cup red cabbage, shredded (optional)
   15 ounce can chickpeas (optional)
   1/4 cup green onion, chopped (optional, garnish)
   1 tablespoon sesame seeds (optional, garnish)
   1 tablespoon fresh cilantro, roughly chopped (optional, garnish)

Directions

  1. In 1 tbsp of water, cook red onion, ginger, and garlic until fragrant. About one minute.
  2. Add curry powder. Cook one minute.
  3. Add coconut milk, broth, honey, soy sauce, and red pepper flakes. Bring to a boil and simmer 15 minutes.
  4. If desired, add optional ingredients and simmer 3 minutes.
  5. Serve over rice.
