This is an attempt to make a simple curry sauce using red curry powder I recently found in the cabinet. This recipe is a work in progress. Do not try this at home!
Ingredients
2 tablespoons red onion, finely minced 1 tablespoon fresh ginger, minced 1 garlic clove, minced 2 tablespoons curry powder 14 ounce can coconut milk 1/2 cup broth (vegetable or chicken) 1 tablespoon honey 2 tablespoons soy sauce 1/4 teaspoon red pepper flakes 1/4 cup carrots, shredded (optional) 1/4 cup red cabbage, shredded (optional) 15 ounce can chickpeas (optional) 1/4 cup green onion, chopped (optional, garnish) 1 tablespoon sesame seeds (optional, garnish) 1 tablespoon fresh cilantro, roughly chopped (optional, garnish)
Directions
- In 1 tbsp of water, cook red onion, ginger, and garlic until fragrant. About one minute.
- Add curry powder. Cook one minute.
- Add coconut milk, broth, honey, soy sauce, and red pepper flakes. Bring to a boil and simmer 15 minutes.
- If desired, add optional ingredients and simmer 3 minutes.
- Serve over rice.
