This is an attempt to make a simple curry sauce using red curry powder I recently found in the cabinet. This recipe is untested and a work in progress. Do not try this at home!

Ingredients

  • 2 tbsp red onion, finely minced
  • 1 tbsp fresh ginger, minced
  • 1 garlic clove, minced
  • 2 tbsp curry powder
  • 14-ounce can coconut milk
  • 1/2 cup broth (vegetable or chicken)
  • 1 tbsp honey
  • 2 tbsp soy sauce
  • 1/4 tsp red pepper flakes
  • 1/4 cup carrots, shredded (optional)
  • 1/4 cup red cabbage, shredded (optional)
  • 15-ounce can chickpeas (optional)
  • 1/4 cup green onion, chopped (optional, garnish)
  • 1 tbsp sesame seeds (optional, garnish)
  • 1 tbsp fresh cilantro, roughly chopped (optional, garnish)

Directions

  1. In 1 tbsp of water, cook red onion, ginger, and garlic until fragrant. About one minute.
  2. Add curry powder. Cook one minute.
  3. Add coconut milk, broth, honey, soy sauce, and red pepper flakes. Bring to a boil and simmer 15 minutes.
  4. If desired, add optional ingredients and simmer 3 minutes.
  5. Serve over rice.
