Simple Curry Sauce

This is an attempt to make a simple curry sauce using red curry powder I recently found in the cabinet. This recipe is untested and a work in progress. Do not try this at home!
Ingredients
- 2 tbsp red onion, finely minced
- 1 tbsp fresh ginger, minced
- 1 garlic clove, minced
- 2 tbsp curry powder
- 14-ounce can coconut milk
- 1/2 cup broth (vegetable or chicken)
- 1 tbsp honey
- 2 tbsp soy sauce
- 1/4 tsp red pepper flakes
- 1/4 cup carrots, shredded (optional)
- 1/4 cup red cabbage, shredded (optional)
- 15-ounce can chickpeas (optional)
- 1/4 cup green onion, chopped (optional, garnish)
- 1 tbsp sesame seeds (optional, garnish)
- 1 tbsp fresh cilantro, roughly chopped (optional, garnish)
Directions
- In 1 tbsp of water, cook red onion, ginger, and garlic until fragrant. About one minute.
- Add curry powder. Cook one minute.
- Add coconut milk, broth, honey, soy sauce, and red pepper flakes. Bring to a boil and simmer 15 minutes.
- If desired, add optional ingredients and simmer 3 minutes.
- Serve over rice.
