Stephanie's Tamale Pie

Ingredients

  • 1 pound ground beef
  • 1/2 small diced onion
  • 1-1/2 tsp chili powder
  • 3/4 tsp cumin
  • 3/4 tsp salt
  • 1/2 tsp pepper
  • 1 can stewed tomatoes with juice
  • 1 small can sliced olives
  • 1 small can green chilies
  • 1 can corn - drained
  • 1 egg, beaten
  • 1-1/2 cup milk
  • 3/4 cup corn meal
  • 1/2 tsp salt
  • 2 cups shredded cheese

Instructions

  1. Brown ground beef and onions. Drain any grease.
  2. In medium bowl add: ground beef and onions with all seasonings, tomatoes, olives, chilies, and corn. Mix.
  3. In a medium bowl or 4-cup Pyrex, add: egg, milk and cornmeal and salt. Pour into bowl with ground beef mixture.
  4. Spray glass casserole with pan spray. Pour ingredients in to the casserole. Cover with lid.
  5. Bake at 350 for 1 hour uncovered. Remove from oven and sprinkle 2 cups of cheddar on top. Put back in oven for 10 more minutes. Let rest for 10 minutes.
  6. Serve with sour cream and salsa.
