Greek Tomato Cucumber Salad

  • 1/2 cucumber, English or Persian
  • 2 large plum tomatoes
  • 1/2 red onion
  • 8 kalamata olives, quartered
  • 1 tablespoon olive oil
  • Juice of 1/2 lemon
  • 1 tsp za'atar
  • Sea salt and cracked black pepper
  • 1/8 to 1/4 cup if crumbled feta cheese

Combine all ingredients into bowl except feta cheese. Refrigerate for several hours to marry. Before serving let come to room temp for 20 minutes. Fold in feta cheese and plate.
