Stephanie and Karen’s Minestrone Soup

Yield: 6 servings

Ingredients

  • ½ lb. ground beef
  • ½ cp. onions, chopped
  • 7 cps. water
  • 7 beef bullion cubes
  • 3 stalks celery, sliced
  • 4 carrots, peeled, sliced
  • ¾ tsp. Italian seasoning
  • 1 Tbs. parsley
  • 15 oz. can stewed tomatoes
  • ½ cup macaroni and/or bow tie
  • 15 oz. can kidney beans, drain
  • 15 oz. can green beans, drain

OPTIONAL

  • 8-15 oz. garbanzo beans, drain
  • Fresh zucchini
  • small can corn, drain
  • broccoli
  • cabbage

Directions

  1. Brown ground beef & chopped onions. Drain fat/oil.
  2. Add water, bullion cubes, celery, carrots, parsley, Italian seasoning, stewed tomatoes. Bring just to boil, then lower heat and cook 1 hour.
  3. During last 15 minutes, add macaroni/pasta, kidney beans, green beans, and any or all optional items. DO NOT ADD SALT.
  4. NOTE: May add more grnd beef, pasta, and increase seasoning.
