Minestrone (Stephanie and Karen)
Stephanie and Karen’s Minestrone Soup

Yield: 6 servings
Ingredients
- ½ lb. ground beef
- ½ cp. onions, chopped
- 7 cps. water
- 7 beef bullion cubes
- 3 stalks celery, sliced
- 4 carrots, peeled, sliced
- ¾ tsp. Italian seasoning
- 1 Tbs. parsley
- 15 oz. can stewed tomatoes
- ½ cup macaroni and/or bow tie
- 15 oz. can kidney beans, drain
- 15 oz. can green beans, drain
OPTIONAL
- 8-15 oz. garbanzo beans, drain
- Fresh zucchini
- small can corn, drain
- broccoli
- cabbage
Directions
- Brown ground beef & chopped onions. Drain fat/oil.
- Add water, bullion cubes, celery, carrots, parsley, Italian seasoning, stewed tomatoes. Bring just to boil, then lower heat and cook 1 hour.
- During last 15 minutes, add macaroni/pasta, kidney beans, green beans, and any or all optional items. DO NOT ADD SALT.
- NOTE: May add more grnd beef, pasta, and increase seasoning.
