Ingredients

  • 6 eggs, separated
  • 1/2 cup sugar
  • 1 qt whole milk
  • 2 cups heavy cream
  • 1/2 tsp ground nutmeg

Steps

  1. Separate the eggs carefully, placing the yolks and whites in two different bowls.
  2. Beat the egg yolks and sugar with a whisk until fluffy.
  3. Add the milk and then the cream to the yolk mixture. Mix in any extracts if using, then refrigerate to chill.
  4. Beat the egg whites with a mixer or whisk until they form soft peaks. Do not overwhip.
  5. Pour the chilled yolk mixture into a serving bowl. Gently add the whipped egg whites on top and fold in.
  6. Spoon into mugs and sprinkle nutmeg on top. Serve.
